1/4 cup flour 1 tsp salt 1/4 tsp pepper 1/2 tsp thyme
2 half large skinless chicken breasts 1/4 cup butter 4 green onions, chopped 1/2 cup sliced mushroom ( I usually add a bit more as we love mushrooms and they cook in, also slice them quite thick. 2 tsp lemon juice 1 tsp sugar 1/2 tsp salt 1/3 cup apple juice
Mix flour salt, pepper and thyme in a plastic bag. cut chicken into bit size pieces, add to bag and coat well. Brown chicken with melted butter in frying pan and remove to casserole dish.
Add green onions and mushrooms to dish when all chicken is done. Mix lemon juice, sugar, salt and apple juice and pour over chicken mix. bake covered for about 1/2 hour at 350F (160C)
Finally I got around to try this recipe because we love chicken and eat a lot of it. It's very very good and one of our favourites now; I especially loved the idea of using apple juice! I can highly recommend this recipe, thank you for sharing, Elly!
