Buffalo tastes much like beef, only less fat so it must be cooked accordingly. Do not cook it dry or no one in your house will ever eat it again! It also should be medium rare or it becomes tough.

Buffalo and venison are 2 of the healthiest meats you can eat due to the low fat content.

My family liked the buffalo meat. There was no left overs. I season it much like beef and cooked it on my George Foreman grille. There was almost no fat drippings. I was surprised that my kids ate the meat because I have never been able to get them to eat any meats but beef and chicken. I'm going to try to get them to eat lamb. It funny they won't try lamb but my youngest daughter can't wait to try Haggis next month at the Burns dinner we are going to-go figure I told her she can have my portion. I'm going to have the vegetarian haggis, which my son says is not haggis, his comment to vegetarian haggis is mom its not right its just wrong!

They are two of the tastiest, also. YUM! I grew up with these as a regular part of my diet. They are exceptional when well prepared. The transition from "medium-rare" to "jerky" is very quick. biggrin.gif

I am so glad everyone liked it. I know you get used to wild game and who wants beef. I don't think I could do the haggis. What all is in the vegetarian haggis? I may be able to do that.. It is like everyone has said so much better for you. I get to where I really miss it. I love your avatar it is really pretty. Do you own horses?

There are several good recipes for vegetarian haggis in fact I thought I saw one on this site, anyway some the ingredients are potatoes, oats, nuts, onion, mushrooms, carrots, kidney beans, seasonings and sometimes whiskey.

In answer to your question, do I own horses? Yes I do, I have 4-a quarter horse, a paint quarter horse, a paint Missouri Fox Trotter, and an Arabian mix.

~ This eve I attempted to be creative.. lol.gif I made some rice with a bean topping..added cheese (colby/cheddar), green onions, black olives, tomato, cucumber, garlic, mushrooms...topped it off with hot sauce and sour cream..served it with warm tortillas and Ginger Ale...it was tasty! chef.gif

After finishing up my Christmas shopping I went to Arbys and had one of their Chicken club wraps. I was surprised it was good. It was also warm. I normally don't eat out much. eat.gif Probably a zillion calories oh well figured I burnned it off walking and shopping shopping and walking you get it. smile.gif That counts doesn't it?

Today for lunch I had a artery clogger special from a local place: A deep fried pizza puff, some deep fried cheese sticks, and a medium Pepsi. I usually get lemonade with that, but this place didn't have any sadangel.gif .

For dinner, ham and macaroni & cheese.

~~Pizza Puff deep fried?..is that like a regular pizza with toppings of your choice then deep fried?..sounds yummy I'm just not certain what I am thinking they are is really what they are.. lol.gif sad.gif And I love Cheese Sticks!
