2 large leeks 1 large potato 1 oz butter 1 bay leaf 1.5 pints Quarter pint single cream 1 or 2 tbsp freshly chopped parsley Salt and pepper to taste.
First thoroughly wash the leeks, which may contain a lot of gritty soil. Use as much of the green portion as you can, but throw away the tougher top of the leaves. Slice into rings. Prepare and cut the potato into small pieces. Melt the butter and saute the potatoes/leeks gently in the butter (add bayleaf). Cook for approx 10 minutes, but do not let the vegetables brown.
Add the water, allow to come almost to a boil, then simmer gently for approx half an hour. After this you can either put it through a liquidiser or a seive. Return to the pan, add the cream, parsley and seasoning and warm through gently. Do not allow it to boil.
Serve with chunky, granary bread (preferably home-made)

Oh, this is one of my favorites! I'm surprised I missed seeing it here!!!! Guess I have been a bit out of it... This soup has such flavor for such a simple dish. I think the bay leaf really gives it the depth of flavor. I love foods that have layers of flavor...... I had this more than once while I was over the pond..... I recall the little place in Stirling, and a pub in Temple Bar, Dublin being the best......I should make this tonight! The temp. has dropped and this would be very good...
