Ingredients

(Original recipe makes 1 gallon cider)

10 apples, quartered


3/4 cup white sugar


1 tablespoon ground cinnamon


1 tablespoon ground allspice

Directions
-------------------------------

1.Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.

2.Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

Sounds good. I put up 7 gallons of unfiltered Lodi Apple and 9 gallons of Winesap Apple and some pear. I mixed a little apple with pear and added cinnamon to a gallon of Winesap for Christmas. I've never added the allspice but will next year. It is all in jars. (I heat it to 170 degrees f and it seals well) Do you think I could add the all spice after I open the jars of unfiltered juice?
