This is a recipe I pulled out of me head. As I tend to do. This is nice for a long day of slow cooking.

I used a 4-5lb. pork loin roast.

First set oven to a low heat 275F

you can use a dutch oven with a rack inside, or a broiler pan. Fill the dutch oven/ broiler pan with Apple cider. Enough to cover the bottom but not to come in conact with the roast. Cover if using a dutch oven, or cover with foil with a broiler pan.

Put into the oven for 2 hours.

Now while that is steaming. Get your grill ready. I soaked a handful of hickory chips for the 2 hours of steaming.

After the roast is steamed for 2 hours, take it out of the oven to rest for a few. Now go and light your grill. This should be indirect heat.

Now, after the roast has cooled a enough to handle. Cover the entire roast in Apple butter. a generous amount. After the coals have gotten hot and ready to use, add the hickory, and then place the roast in the grill. Cover to keep as much of the smoke in as possible.
Let that smoke for about 1 hour 20 minutes.

While that is cooking away, cut two granny smith apples, and two medium onions. The liquid that was used in the steaming, save about 1 cups worth. Take a table spoon of butter and heat in a skillet, add the apple/onion mixture. Let saute' for 10-15 mins. ( Now i added a few red pepper flakes to spice it up a bit) Now add the steaming liquid, and 2 table spoons of apple butter. Stir occationally, and let simmer for 15-20 mins. Until everything is tender. OOOPps I almost forgot!!! Add about a .25 teaspoon of crushed thyme just before turning off the heat.

Remove roast from grill, slice and accompany with the apple /onion mixture....

I know it seems very labor intensive. But I assure you it is quite easy, and not to time demanding. I created it yesterday, and did my lawn and garden work inbetween.... smile.gif

I had a nice Tennents with my meal.... beer_mug.gif MMMmmm nothing like scottish beer! wink.gif
