Well, I guess that people just say that because they can't think of any other way to describe it. Take Alligator for example. People always say that it tastes like Chicken, but it really dosn't. It tastes like alligator... but I guess that chicken is the only common thing that it tastes like... It is kinda like saying that Venison tastes like beef... well kinda it does, but it is really quite different! (And so much better!!!)
But if you really think about it, what does chicken taste like? I mean obviously it has to be rather non-descript if everything else tastes like it, but distinct enough to recognize. I'm a fan of chicken personally, and find that most things that are described as "tasting [just] like chicken" merely share a similar texture to chicken, rather than a similar flavour. That's just my 2 cents

1.) Veal IS Beef that is why it tastes like it. Veal are young Calfs that are kept in a 4x6 stall and are raised up off the ground so they can not move around and fed milk and only milk all the time til they are a certain age. then they are slaughtered. I know this because I lived right next door to a "Cattle Ranch" and they specialized in "Veal"
2.) Alligator tastes more like watered down chewy beef brisket. Yes I have eaten that too.
3.)out of all the exotic food I have eaten the one that most resembles chicken is in fact Rattle Snake. Frogs Legs taste like chicken that has been soaked in water for a few days.
when people say "It tastes like ___________." It's because it has a surprisingly similar flavor and tends to catch one off guard because they were expecting something different or disgusting.
this is an interesting subject to find here, but I think it would be better suited in the General forum, I am placing it there.
People try to use past experience to define what they are tasting at that moment. If it is something they can not define, they use the closest association which in most cases is chicken. I think meat from different species tastes very different but that is just me...

Ah, very interesting....What if chicken was lik tofu and does not have any flavor but we interject our own idea of what it tastes like..And maybe my idea of the flavor of chicken is different from everyone else. hmm.
