Mine's the pipes (bag and Ullian) and drums (like in Braveheart's Battle of Sterling)...no other instruments make that kind of physical feeling in me.

Mine would have to be the bodhrán. Whether rumbling softly like coming thunder or providing the rhythm for a rousing pub sing-a-long, I've always seen the bodhrán as the heart of the music.

I can't really name a single instrument, for me it's the harmonization of highland pipes along with fiddle. There's a definitely a synergy there, where the combination of the two is more than the sum of them individually.

Fiddle and the pipes are both great
The Pennywhistle is enchanting, and the Digirdoo mysterious
Hammer Dulcimer is always fun to listen to

But there's one instrument that strikes my heart like no other: Harp!
