female

1 cup all purpose flour
1 cup whole what flour
3 Tablespoons sugar
2 1/2 teaspoons baking powder
2 teaspoons grated orange peel
1/4 teaspoon salt
1/3 cup cold butter
1 egg
1/2 cup chopped mandarin oranges, well drained
additional sugar

Orange butter:
1/2 cu butter, softened
2 Tablespoons orange marmalade

In a small bowl, combine flours, sugar, baking powder, orange peel and salt. Cut in butter until mixture is like coarse crumbs. Combine the egg and the milk and add to the flour mixture. Stir in oranges until just moistened.

Turn dough out on a floured surface. Knead gently 10 times and pat into a 6" circle. Sprinkle with sugar. Cut into wedges and place on a greased baking sheet. Bake at 400 degrees for 15-20 minutes until golden brown. Cool on wire rack.

To make butter - beat butter and marmalade in a small mixing bowl until fluffy.
Serve with scones.

Makes 8 scones

I made these for a little morning meeting at work (they were still warm). Went together very easy. And yummy - very deluxe with the fresh orange and orange peel, and then the orange butter. A wonderful thing for that cold, grey climate of Scotland, too, like a platter of sunshine -- and special enough for teatime as well as breakfast.
Thanks for including it! thumbs_up.gif
