Brown Bread

Ingredients:
? 4 cups Whole wheat flour
? 2 cups White flour
? 1 1/2 ts Salt
? 1 1/2 ts Baking soda
? 2 cups Buttermilk or sour milk
? 2 tb Butter


Directions:


Mix the whole wheat flour throughly with the white flour. Rub the butter into the flours. Add the salt, and soda. Make a well in the center and gradually mix in the liquid. Stir with a wooden spoon. You may need less, or more liquid - it depends on the absorbent quality of the flour. the dough should be soft but managable. Knead the dough into a ball in the mixing bowl with your floured hands. Put in on a lightly floured baking sheet and with the palm of your hand flatten out in a circle 1 1/2 inches thick. With a knife dipped in flour, make a cross through the center of the bread so that it will easily break into quarters when it is baked.

Bake at 425 degrees for 25 minutes, reduce the heat to 350 degrees and bake a further 15 minutes. If the crust seems too hard, wrap the baked bread in a damp tea cloth. Leave the loaf standing upright until it is cool.

Garlic Bread
Appetizer
Ingredients:
1 French bagette (Parisian bread)
4 tbsp chives, chopped
3 tbsp Italian parsley, chopped
1 tbsp basil
2 tbsp rosemary
1 clove garlic, chopped
4 tbsp butter/margarine
Salt and pepper (optional)

Chop 2/3 of bagette into slices about half an inch thick. Lay on cookie sheet. Mix herbs and garlic together. Melt butter in microwave, covered, then pour into herb mix. Use pastry brush to coat each slice of bread evenly. Bake in oven for 10-15 mins at 350 degrees F. Enjoy! chef.gif

I made the Outback bread that you have the recipe for here. I seemed to come out great. The only problem I saw was that 30 min was alittle too long. I took it out ~5 min early cause I thought I smelled burning. I am sure all stoves are slightly different. I will tell you how it tasted after Thanksgiving. I hope it tastes as good as the stuff from the steakhouse. I never saw in the recipe where you put crack into the recipe, I just assumed that was the reason I could not stop eating it.

Recipe Name: CHALLAH
Category: BREADS
Serves: 20

6 1/2 Cup flour
2 each Eggs
2 Pack yeast
1 1/4 Cup water
1/3 Cup sugar
2 tsp salt
****** BREAD BRUSHING
1 each Egg

1. Put flour in a bowl, and make into a well shape.
2. Dissolve yeast in 3/4 cups of water with 1/2 tsp sugar. Place the mixture in the well and let sit for 15 minutes (done when bubbles).
3. Add sugar, salt, oil, 2 eggs (one at a time!), and the remaining water Mix well.
4. Knead the dough, and place in a lightly floured bowl.
5. Cover and let rise for 1 hour.
6. Punch down the dough and let rise for another hour.
7. Divide the dough into 4 parts.
8. Now divide each part of dough into 3 parts. Roll each part into a long log shape about 1 1/2 to 2 inches thick.
9. Braid the 3 logs together to form a loaf. This will make 4 small loafs.
10 .Place the loafs on a greased sheet, cover, and let stand for 1/2 hour.
11. Beat the remaining egg and use it to brush the loafs. 12. Sprinkle the loafs with sesame or poppy seeds.
13. Bake for 45 minutes at 350 degrees or until tops are golden brown.

I have atleast one recipe for Amish Donuts, just might take me awhile to find it , I have over 40,000 recipes to search LOL!

Mexican Donuts
Makes 6 donuts
3/4cup flour
1/4tsp baking powder
1/4 tsp salt
2 Tbsp solid vegetable shortening
1/4 cup lukewarm water

1 1/2 cup vegetable oil
2 tbsp sugar
1/2 tsp cinnamon
plastic wrap

Put Flour,baking powder and salt in Medium size bowl and stir with fork.
Add shortening use your hands and work shortening until mixture is fine.
Add water 1 tbsp at a time to her four mixture until mixture dough is elastic but firm.
Form a dough ball Grease a small bowl. Put dough into bowl.
Lightly grease the top of the dough cover with plastic wrap and chill.
Divide dough into 6 balls
Roll out the dough until they are as thin as possible. Poke a hole in the center of each donut with you finger and spread slightly to make it bigger
Put oil into an electric skillet and Heat to 350°f(175°c)
Stir sugar and cinnamon together in small bowl
Carefully place donuts in hot oil, using. Cook both side3 until golden brown. Drain cooked donuts on paper towels. Sprinkle with sugar and cinnamon mixture.

Amish Donuts
1/2 c. shortening
1/2 c. sugar
1 tsp. salt
6 1/2 c. flour
3 egg yolks
1/2 c. mashed potatoes
2 c. scalded milk
2 cakes yeast
1 tsp. nutmeg

Blend shortening into sifted dry ingredients. Combine egg yolks with potatoes. Add to dry ingredients. Add yeast to cooled milk. Gradually blend into other mixture. Let rise for 40 minutes. Cut and let rise again. Roll dough 3/8-inch thick. Fry in hot fat. Glaze.

GLAZE
Add 3 tablespoons water to 1 cup powdered sugar. Dip donuts into mixture.

Beer Bread

I've since lost the original recipe from my Mom but what's in memory is:

1 can of flat beer (non-flat works for me)
2 tablespoons of sugar or honey
3-4.5 cups of self-rising flour

Pour beer and honey/sugar into a bowl. Add flour by the cupfull and stir/mix/knead until it's a bread consistency. Still tacky but not wet. Toss into an oven at 375 until a knife inserted in the center comes out clean ~45 minutes to an hour. While still hot, rub a stick of butter/margarine over the top of it to taste. For extra buttery goodness, pierce the loaf with a knife and then rub the butter on it.

The type of beer you use does not matter for bread creation but it will influence the taste and color of the final loaf. Guinness makes a nice brown loaf that tastes heavenly. Budweiser makes a light colored bread that has a milder taste. Experiment and have fun.

I've heard of beer bread but never gave it a go...
To be honest~I am not a bread maker sad.gif No matter how hard I try it
just doesn't turn out for me and I so love bread!

Parker House Rolls- Bobby Flay

1-1/2 cup milk
1 stick unsalted butter, cut into pieces, plus more for brushing
1/2 cup sugar
1 pkg. dry active yeast
1/2 cup warm water
3 large eggs, lightly beaten
1-1/2 teaspoons salt
6 cups all purpose flour

Place milk in a small saucepan and bring to simmer. Remove from the heat, stir in the butter and sugar and let cool. Dissolve yeast in warm wter and let dissolve until foamy. Combine milk, yeast, eggs, salt and 1/2 of the flour in a mixer with the dough attachment and mix until smooth. Add the remaining flour, 1/2 cup at a time, and stir until a smooth ball forms. Remove from the bowl and knead by hand on a floured surface for about 5 minutes. Place in a greased bowl, cover and let rise until doubled in bulk, about 60-70 minutes. On a floured surface, punch down dough and shape into desired shapes. Place on a parchment lined baking sheet. Cover again and let rise until doubled, about 30-40 minutes.
Preheat oven to 350 degrees F.
Bake for about 20 minutes or until golden brown. Remove from the oven and brush with melted butter before serving.

I make clover leaf rolls in muffin pans. I use Pam spray so they don't stick. This recipe takes a lot of time but worth the effort! Enjoy!

This is a basic recipe that you could "pimp" by adding all kinds of kernels, such as sun flower kernels or any other to your individual taste. It's also great with a good pinch of "Kuemmel", I think you call it caraway seed? Here we go:


GERMAN RYE BREAD ("Roggenbrot")

Ingredients:


2 pk yeast; active dry
1/2 cup ;warm water
1 1/2 cups milk; lukewarm
2 tbsp. sugar
1 tsp salt
1/2 cup molasses
2 tbsp. butter
3 1/4 cups rye flour; unsifted
2 1/2 cups bread flour; unsifted


Directions:


Dissolve yeast in warm water. In a large bowl combine milk, sugar, and salt. Use a mixer to beat in molasses, butter, yeast mixture and 1 cup of rye flour. Use a wooden spoon to mix in the remaining rye flour. Add white flour by stirring until the dough is stiff enough to knead. Knead 5 to 10 minutes, adding flour as needed. If the dough sticks to your hands or the board add more flour. Cover dough and let rise 1 1 1/2 hours or until double. Punch down dough and divide to form 2 round loaves. Let loaves rise on a greased baking sheet until double, about 1 1/2 hours. Preheat oven to 375° F. Bake for 30-35 minutes. Makes 2 round loaves.
