Bacon and Cheddar Quiche 1 1/3 cups all-purpose flour 1/8 teaspoon salt 1/2 cup cold butter, cut in small pieces 2 to 3 tablespoons ice-cold water Filling 8 strips lean bacon, cooked and crumbled 4 large eggs 1 1/2 cups light cream 1/4 teaspoon dried leaf thyme 1/8 teaspoon pepper 1 cup shredded sharp Cheddar cheese Prepare crust for quiche. In a mixing bowl, mix together flour and salt. Cut in cold butter with a pastry blender until coarse crumbs form; add water, a little at a time, until dough holds together and forms a ball. Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes. On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375°. In a small bowl, whisk together the eggs, cream, thyme, and pepper. Pour into the baked crust. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 375° for about 30 minutes, or until quiche filling is set and lightly browned. Serve quiche with fresh tomato wedges. Quiche serves 8. |

Chicken Casserole 4-5 cups cooked chicken 3 tablespoons butter 1 large onion, chopped 1cup raw rice salt, pepper, sweet basil, rosemary chicken broth-usually 2 cups 1 can evaporated milk Place chicken meat in shallow pan. Sprinkle with salt and herbs to taste. Saute onions in butter until tender-do not let brown! Arrange onion over chicken. Sprinkle rice evenly over top and add enough chicken broth to cover. Cover pan and bake at 350 degrees one and one-half hours. Add milk, full strength. Re-cover and bake another 30 minutes. Do not stir. Hope people enjoy this! |

Recipe Name: ZITI CASSEROLE Category: PASTA Serves: 4 8 Ounces Ziti 1 1/2 Pound Ground beef 1 Cup Onion chopped 1/2 Pound Mushrooms, sliced 1 each Garlic clove, minced 2 Cup spaghetti sauce 1/4 Cup red wine 1 tsp Salt 1/2 tsp Pepper 4 Ounces Mozzarella cheese 1 Cup Sour cream Cook pasta as directed on package, reducing cooking time to 5 minutes. Meanwhile, saute beef and onions until beef is well browned. Add mushrooms and garlic and cook 3 minutes. Drain ziti and combine meat mixture, sauce, wine, oregano, salt and pepper. Mix well. Pour into 2 greased 13x9 inch baking dishes and sprinkle with cheese. Cover with foil and bake at 350 degrees for 35 to 40 minutes. Serve with sour cream. |

Recipe Name: BREAKFAST CASSEROLE Category: BREAKFAST Serves: 6 1 Pound sausage, cooked ,crumbled, & drained) 4 Cup day old bread, cubed 2 Cup cheddar cheese, shredded 10 eggs, slightly beaten 4 Cup milk 1 Tsp. dry mustard 1 Tsp. salt 1/4 Tsp. onion powder optional: 1/2 Cup slice mushroom 1/2 Cup tomatoes, peeled and chopped Place bread in well buttered 9x12 baking dish. Sprinkle with cheese. Combine next 6 ingredients. Pour evenly over the bread and cheese. Sprinkle the sausage and optional ingredients over the top. Cover and chill overnight. Preheat oven to 325f. Bake uncovered for about one hour. Tent with foil if top begins to brown to quickly. |

Recipe Name: GORGONZOLA POTATO PIE Category: CHEESE Serves: 4 2 lbs. Potatoes 1/2 cup gorgonzola (thinly sliced) 5 tables butter salt and pepper 1. Boil and mash potatoes. 2. Butter a baking dish and evenly spread half of mashed potatoes into it. 3. Cover with thin slices of gorgonzola. 4. Cover with remaining mashed potatoes. 5. Place bits of butter on top and bake at 290°F for 8 minutes. Serve hot, season as desired. Serves 4 |

Recipe Name: HOAGIE BAKE Category: CASSEROLE Serves: 8 2 (8 ounce) packages refrigerated crescent rolls or pizza dough 1/4 pound salami sliced 1/4 pound cooked ham sliced 1/4 pound pepperoni sausage sliced 8 slices provolone cheese 8 slices Swiss cheese 2 eggs beaten 2 tables grated Parmesan cheese 1. Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with cooking spray. 2. Cover bottom of baking dish with 1 package crescent roll dough. Layer with salami, ham, and pepperoni. Cover meat with a layer of Provolone cheese and Swiss cheese. Spread 1/2 of the beaten eggs over the cheese. Top with second package of crescent rolls. Brush with remaining beaten eggs, and sprinkle with Parmesan cheese. 3. Bake, uncovered, in the preheated oven for 25 minutes. Cover with foil, and bake for another 10 minutes. |

Turkey Tetrazzini (for those of us who cook quickly - and type too quickly!!): 1 pkg (8 oz) spaghetti broken in 3" pieces, cooked, drained 1 1/2 cups grated Cheddar cheese, divided 1/4 cup Parmesan cheese, divided 2 cups diced cooked turkey 2 tablespoons diced pimientos, if desired 1/4 cup chopped onion 1 can cream of mushroom soup 1/2 cup chicken broth 1/4 cup dry sherry salt and pepper, to taste Combine spaghetti with 1 cup Cheddar cheese, half of the Parmesan cheese, and remaining ingredients. Toss together; place in a greased casserole and sprinkle with remaining cheeses. Cook at 350 degrees F., covered, for about 45 minutes, or until hot and bubbly. Serves 6 to 8 |

Recipe Name: CHICKEN DIVAN Category: POULTRY Serves: 4 4 tables Butter 4 tables Flour 2 1/2 cups Milk 1 Tables Sherry 2 cups Broccoli cooked chopped 8 ounces Chicken cooked sliced 1/4 cup Parmesan grated Melt the butter in a saucepan. Whisk in the flour and cook for 3 minutes. Whisk in the milk. Simmer for 20 minutes. Add the sherry. Set aside. Preheat the oven to 375. Add the broccoli to a well-oiled casserole dish. Top with the chicken. Pour the sauce over the mixture. Sprinkle on the cheese. Bake for 18-20 minutes or until lightly browned. |

Recipe Name: SMOKED GOUDA AND SWEET-POTATO GRATIN Category: SIDE DISH Serves: 18 This is one of Executive Chef Robert Bruce's favorite side dishes served at Palace Café, New Orleans. The bake-ahead technique makes service a snap. Yield: 18 4-oz. portions Sweet potatoes, peeled, sliced 1/4-in. thick 6 Russet potatoes, peeled, sliced 1/4-in. thick 6 Salt 3 Tbsp. Ground white pepper 3 Tbsp. Heavy cream 4 1/2 cups Smoked Gouda, grated 3 cups 1. In 3 shallow 9-in. hotel pans, shingle sweet and russet potatoes. Season with salt and pepper. Repeat. 2. Pour 1-1/2 cups cream over potatoes in each pan. Press potatoes firmly into pan. Allow to rest 10 minutes. 3. Cover with heavy and foil. Bake at 350F for 35 minutes. Uncover; bake additional 15 minutes. Let rest 10 minutes before serving. |

Recipe Name: CHERYL'S COMFORTING MACARONI AND CHEESE Category: MAIN DISH Serves: 6 SOURCE CHERYL 3 Cup elbow macaroni 1 Pound hot or sweet Italian sausage, or mixture of both 1 Large green pepper, diced 1 Large onion, diced 3 Tblsp butter 3 Tblsp flour 2 Cup milk 2 Cup shredded sharp Cheddar cheese 1/4 Cup grated Parmesan cheese 1 1/4 Tsp. Tabasco sauce, more to taste 1 Tsp. salt 1 Clove garlic, minced Cook elbow macaroni according to package directions. Drain; rinse with cold water; drain again. In a 12 inch skillet over medium-high heat, cook sausages until well browned on all sides and cooked through, turning frequently, about 15 minutes. Remove sausages to cutting board. In drippings remaining in the skillet over medium heat, cook pepper and onion until tender, about 8 - 10 minutes, stirring occasionally. remove to a large bowl. When sausages are cool enough to handle, cut them into 1/2-inch-thick slices; add to bowl with vegetables.Preheat oven to 375f. Grease 12x8-inch baking dish. In 2 quart saucepan over medium heat, melt the butter. Stir in the flour; cook 1 minute. Wisk in the milk gradually. Heat to boiling, stirring frequently. Remove from heat. Stir in the cheeses, tabasco, garlic and salt until cheese melts. Stir frequently. In a large bowl combine the sausage, macaroni, and cheese sauce. Spoon into prepared baking dish. Bake for 20 - 25 minutes until mixture is hot and bubbly. |
