One thinks of potatoes, turnips, beets and parsnips in the fall...

How did our Celtic ancestors cook and/or store them?

My ancestors stored all but beets in root cellars. Beets I am not sure of. Carrots and some of the green "Kole" crops do well in cellars too.

My scot grand parents and Irish grandparents had quite different ideas of how to construct a proper root cellar though both worked.

I would suspect that cooking has not changed much for those basic staples though seasoning may have.
