1 1/2 c. unsalted peanuts
1/2 c. light corn syrup
1 c. sugar
1/8 t. salt
1 t. butter
1 t. vanilla extract
1 t. baking soda


Combine first four ingredients in a large microwave-safe glass measuring cup. Microwave, uncovered, on a high setting for 6-8 minutes, stirring halfway through the cooking time. Stir well again; add butter and vanilla. Mix well and cook an additional 1 1/2 minutes. Stir in baking soda. Pour immediately onto a greased baking sheet, cool and break into pieces.

Yield: 1 pound

Oh, hey . . . this was so easy and so good! I tried throwing in some sunflower and sesame seeds and a few unblanched almonds with it, because you know I can't leave anything alone. It was fantastic.
