Well, a couple days ago, we got about a foot of snow in my part of Michigan, contrary to what the weather people want us to believe (7 inches...HAH!) and I know this because I just trudged out to the bird feeder and it was up to my knees! To top it off, this morning, it was minus 10 degrees. One of those weeks... |

EggNog Cheesecake
Ingredients
1 cup graham cracker crumbs 2 tablespoons white sugar 3 tablespoons melted butter 3 (8 ounce) packages cream cheese, softened 1 cup white sugar 3 tablespoons all-purpose flour 1 cup eggnog 2 eggs 3 tablespoons rum such as Captain Morgan Spiced 1 pinch ground nutmeg
Directions
Preheat oven to 325 degrees F (165 degrees C).
In a medium bowl combine graham cracker crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch spring form pan.
Bake in preheated oven for 10 minutes. Place on a wire rack to cool.
Preheat oven to 425 degrees F (220 degrees C).
In a food processor combine cream cheese, 1 cup sugar, flour and eggnog; process until smooth. Blend in eggs, rum and nutmeg. Pour mixture into cooled crust.
Bake in preheated oven for 10 minutes.
Reduce heat to 250 and bake for 45 minutes, or until center of cake is barely firm to the touch. Remove from the oven and immediately loosen cake from rim. Let cake cool completely before removing the rim.
I use my KitchenAid to combine the cream cheese, etc and I make a gingersnap crust rather than the graham crackers.
I use my convection oven though my oven automatically changes the temp for the convection and absolutely make sure you loosen the rim immediately or the 'cake' will crack as it cools. You can make a sauce for it or just use whipped cream (which I do) or have it plain.
But I can tell you there's never anything left and there's only 8 of us for dinner at Christmas. |

The volume is still a bit buggy in that it starts full blast every time, but as soon as you turn it down, it's fine on all stations and yes, they're working much better now!
I love the new widget. Lots of hard work, I know, but so worth it in the end. Thanks for all you do! |

I'm still in the kitchen getting everything ready. Tomorrow, all I have to do is roast the turkey and make the gravy. Everything else will go in the oven to heat through while the turkey is resting. I used to kill myself on the day of and finally got smart |
