I do not know if anyone will be able to answer to this but let's try.I have recently eat haggis and like that a lot.In the same time I learn more on the recipe I discover this : in Canada it is illegal to use the lung of the lamb which mean any haggis buy somewhere do not have any in it.My question is why the lung can't be use?

My honey have suggest when his parent will have animal on there farm in the futur we can buy a lamb and do real haggis. We can get all part of the the lamb and the fur so no part of it will be lost .We will do a big scottish party (scottish meal only and being costume any occassion to wear a costume is good) for that day and invite all our friend and family.Well this is only in a few years but the idea is pretty good except for the part that inlcude the lung if it's illegal it must be a good reason ???

Don't know the answer to your question, maybe someone from Canada can answer it for you.
