I recently had a cup of Cheeseburger soup at a local restaurant. Mainly I ordered it because I was intrigued by the name and what it tasted like. It was pretty good I thought, so I decided to make a batch for the family which came out even better!

Before you jump to conclusions, it is not like eating a cheeseburger. I compared it more to a beef creamy soup perhaps something that is made in Scotland or Ireland. In any event, a whole pot was eaten in one sitting by a family of 5! So here is the recipe.

INGREDIENTS
1 lb ground beef (used very lean beef)
1 onion, diced
3⁄4 cup shredded carrot
3⁄4 cup chopped celery
1 teaspoon dried parsley
3 cups chicken broth
4 cups potatoes, cubed
1⁄4 cup all-purpose flour
2 cups cheddar cheese, cubed (I used grated already packaged)
1 1⁄2 cups milk
4 tablespoons butter or 4 tablespoons margarine


DIRECTIONS
1. In a large pot, brown ground beef and onion.

2. Add broth, celery, carrots, parsley and potatoes.

3. Bring to a boil, and then simmer until potatoes are tender, about 10-12 minutes.

4. In a saucepan, melt the butter and stir in flour. (this is probably the most difficult part, you don't want to let the butter and flour sit too long before adding the milk - almost like making gravy)

5. Add the milk, stirring until smooth.

6. Gradually add milk mixture to the soup, stirring constantly.

7. Bring to a boil and reduce heat to simmer.

8. Stir in cheese; continue to stir until cheese is melted then serve.

9. Do not boil.


What might go really good with the soup is warm fresh baked bread for dipping. Next time will try that!

Thanks! Nothing like home made soup. So much better than canned soup. Looking for another soup recipe now to make later in the month...
