This is a quick recipe which can be made in advance and just baked at the last minute. They take about 10 mins to prepare and about 12-15 mins to bake. Makes 4 individual parcels 4 oz strawberries, hulled and cut into chunks 4 oz raspberries 4 oz blaeberries (For USA - blueberries will do) 2 tablespoons caster sugar 4 sheets file pastry 1 oz melted butter Icing sugar (well sifted) Preheat oven to gas mark 6/400F Mix strawberries, raspberries nad blaeberries with caster guar Cut the filo pastry half, brush each strip with melted butter and lay two strips on top of one another. Place a spoonful of the fruit in the top righthand corner of each strip and fold the pastry into successive triangles (so they end up looking like an Indian samosa). Brush a little butter on top of each parcel and bake for about 15 minutes until golden brown. Dust lightly with caster sugar - and if you have any fruit left over, then garnish the plates with it, and serve with either ice-cream or clotted cream. |

MMMMmmmmm very yummy fer a hot summer evening. But that filo dough....filo and I have had our problems in the past. I was making bakliva, and it DID NOT want to mind itself... LOL! It's has been several years since i have used it. Maybe it's time to try it again. |

The secret iis to keep the packet of filo under a damp tea-towel and only start to cut it when you have the filling and the melted butter ready........ Speed is the essence! |
