Throw all ingredients in a large bowl together, no fuss no bother. Mix all ingredients together until it resembles cookie mix. Press into a slice tin.
Bake in a low, slow oven 160-180 degrees C. for 40 to 60 minutes until done.
When cool slice into fingers.
I really like them and they are really easy to do. Also there are existing "tea biscuits" and they're great when you dip them into your milked tea:
1 1/2 cups flour
1/2 cup water
2 tablespoons shortening, melted
1 egg, beaten
1 tablespoon sugar
1/2 teaspoon salt
2 teaspoons baking powder
Mix together flour, baking powder, salt and sugar. Add well beaten egg and melted shortening to water. Mix slowly with the dry ingredients. This will make a soft dough. Roll out on floured pastry board, until sheet is 1/2 inch thick. Cut with biscuit cutter. Bake on greased sheets for 25 minutes in moderate oven.

Without a job, I have plenty of time to cook. But I guess it would be easier if I had flour and sugar to do those recipes...I'll have to buy some tomorrow morning.. Thanks a lot Aon Daonna!
Great recipes Aon. For those of us in the USA here are some conversions to help:
Superfine sugar, known in Britain as castor (or caster ) sugar, is more finely granulated. Because it dissolves almost instantly, superfine sugar is perfect for making meringues and sweetening cold liquids. It can be substituted for regular granulated sugar cup for cup.
In the USA, butter is sold in sticks. 1 stick of butter is 1/4 pound or about 110 grams.
I haven't tried the recipes yet, but they sure sound delicious!
I love to dip digestives with one chocolate side into Café au lait... the way the chocolate is melting and the biscuit iis soaking up the coffee..... mmmmmmmhhhhhh
I tried the tea biscuits and they were really good. They are also good dipped in milk. I had a little trouble with the dough because it was too sticky at first. Is that normal or did I do the right thing by adding more flour?

Does anybody have the recipe for "Ginger crinkle" or "Ginger Nuts"? I'd like to do them myself but I can't find a decent recipe... same for jamaican ginger cake... very delicious but I just can't find the recipe...
