This is the hotpot recipe my mum and granny made and who know who else before. 
Ayrshire Hotpot
1 Kg slice Sausage or 1 Kg Lamb, cut into thick slices or pieces.
1 Kg Potatoes, peeled and sliced
2 onions peeled and thinly sliced
4 or 5 carrots, peeled and thinly sliced
700 gm of Turnip, peeled and thinly sliced
25gm Butter
25 gm flour
1 pint chicken or beef stock
Season the lamb with 1 teaspoon of salt & a good pinch of pepper, dust with the flour. Saute the onions in 15g of butter with little salt for 4-5mins . If using Lorn or sliced sausage, no more pepper would be needed at this point.
Put the sliced potatoes [roughly 2mm thick]. in a medium size bowl, add the remaining 25g melted butter, season with 1 teaspoon of salt and a pinch of white pepper, mix well.
Starting with the meat and ending with the potato, put alternate layers into a pot.
Pour stock over the lot, you won't need all of the pint of stock, just add about 1/4 and add more as you think it needs, don't want it soggy but not going dry either.
Put on medium heat on top of cooker until slightly boiling then simmer away for at least an 1 1/2 hours, the longer the more tastier, like most stews and mince its nicer the next day.
It's nice served with steamed cabbage or sprouts or just on its own.

MERRY CHRISTMAS, I think we all want to have respect for everones beliefs, sadly that is not the way it is, as a Scot living in Australia, the past few years I read in the papers of East meets West, rapings of western girls by eastern or middle eastern men, so quite honestly I don't see it as CHRISTIAN against eastern belefs, I don't even see it as religous at all, TOLERANCE is great as long as its a TWO way Street, and I don't see any sign of that happening anytime soon unfortunately.

Yummy Chicken
1/4 cup flour
1 tsp salt
1/4 tsp pepper
1/2 tsp thyme
2 half large skinless chicken breasts
1/4 cup butter
4 green onions, chopped
1/2 cup sliced mushroom ( I usually add a bit more as we love mushrooms and they cook in, also slice them quite thick.
2 tsp lemon juice
1 tsp sugar
1/2 tsp salt
1/3 cup apple juice
Mix flour salt, pepper and thyme in a plastic bag. cut chicken into bit size pieces, add to bag and coat well. Brown chicken with melted butter in frying pan and remove to casserole dish.
Add green onions and mushrooms to dish when all chicken is done.
Mix lemon juice, sugar, salt and apple juice and pour over chicken mix. bake covered for about 1/2 hour at 350F (160C)

Rosemary, you`ll find most of folk in Central Scotland speak Lallans in their own home, but it is a necessity that we can be understood in our commerical business too, we can`t run about spouting Lallans in our business dealings and if we are ever to have more say in the `running` of our country, it would really fall into Westminster`s lap, if they could say, `who the hell can understand that lot north of the border` so how can they communicate, they can hardly speak English, how could they possibly `run their own country` nobody understand them. whether we like it or not english is the No.1 language in the world and of course you need to be understood.
I don`t think it`s a case of our own tongue disappearing, we rely on tourism a great deal, so No!. I disagree with you, our own way of speaking will never disappear completely, if it does it will be out of need, out of habit, of speaking `properly`, to be understood, but even taking that into consideration I doubt very much it will disappear, scots, most scots are very passionate about their culture.
Gaelic was a completely different story. |

I recently had to get my dog put to sleep, as he had a cancerous disease and I did not want to watch him starving to death, so I made that decision, it was one of the hardest things I have ever had to pluck up the courage to do, to a beloved four legged friend, rather than see him suffering.
So to have to watch a beloved daughter being starved to death, must be horrific, if the husband is so adamant that this is his wife`s wish, surely to god they could find an easier way, it just seems so bloody barbaric to me and I`m sure to any decent person. |

Yes I do understand that, I was actually meaning if you asked any Scot `today` their perception would be that most immigrants went to Canada, there would be very few if any Scots who don`t have relatives in Canada, of the last few generations. |

Eric Bana was a good comedian in the Land of Oz, since seeing him in `Troy` just think he did a great job, and boy he did scrub up well think he stole Brad`s thunder, yep he did well in this movie. anyone seeing his comedy work before `Black Hawk Down` would be hard put to recognise him, and he is a genuinely nice guy |

another good book apart from the one Gabby recommended is `Sons of the Wolf` by Ronald Williams .
there is a lot more to the Clan Gregor than `Rob Roy` though he did us proud. A GREAT man whom it is quite amazing that he died in his own bed surrounded by family, quite an amazing feat for his time and the life he was forced to lead.
Another good book about the Clan Gregor on a whole not just Rob`s time is `Sons of the Wolf` by Ronald Williams, it explains a bit more as why the proscription law against the clan was brought about, and how Alasdair of Glenstrae was so cruelly deceived.

What a wonderful perspective you have! CS, it is very comforting, wish you had been around when my mammy passed away. What a comforting post that was!  What a lovely thread too, it`s a terrible terrible thing when you lose sopmeone you love but to have such support is really beautiful. when you hear of folk losing mothers and brothers so close and don`t seem to care, this thread has really touched me and I`m sure plenty of others.  you are a comfort all of you! |

What an awful thing to happen! so glad you are nearly back to `normal`
I don`t get here very often but have never saw before what pain and agony a wee accident like that can cause It`s good that you shared it with everbody but of course no good that you have had this happen  you`ve handled it very well, all the best to you, hope it all goes well for you in the future whit a time of it you`ve had, good luck for the future and all the best |
