Shortbit, I am glad you had a great time in Scotland! I want to go to your website and view all of the pics - I hope you took lots of photos of the "native clothing"  ;)

I suffered a major computer systems crash a couple of weeks ago - systems shut down one by one over a series of weeks until absolutely nothing worked! I could not even run a systems check for virus. So I lost basically everything in the computer.

But I am BAAAAACK now, and just as sassy as ever! ::hello

We were all set to attend the Kentucky Scottish Weekend at Gen. Butler State Park, but according to the Natl' weather service, that area of the state is supposed to get heavy rains and thunderstorms, with flooding and hazardous road conditions...so we are staying home. (cry)

We hope to go to Glasgow Games though in two weeks - hopefully the weather will be more cooperative.

That happens all the time here at my house! If I make up a huge batch of potato salad a day ahead of time, and put it in the refrigerator, I am lucky if there is any still left to take to the picnic! ::tong

Okay, Aon - since you shared your shortbread recipe I will share my Potato Salad Recipe, even though I am not sure if it is Scottish or not. ::rolling

First, boil 4 or 5 fist sized potatoes until they are soft. Let them cool then peel the skins off of them. Dice them up into small bite sized pieces and place them in a large bowl.

Then add 1/2 cup mayonaise, 1/4 cup diced sweet pickles, a whole diced green bell pepper and a whole diced onion. Stir in 1/4 to 1/3 cup of your favorite yellow mustard. Refrigerate over night.

These measurements are approximate. I really dont do a lot of measuring - I just keep adding a bit of this and a bit of that until it tastes right.  

If you try this recipe, let me know how it turns out! It is usually quite a crowd-pleaser at picnics and pot luck dinners!
