My wife got me a new Celtic cookbook last week and tonight is the first i have gotten to use it. Here is one of the recipes I made tonight.

Scotch Collops with cream

1/2 stick of butter
1 tablespoon oil
4 medium onions, chopped
4 (6 ounce) slices rump roast
salt and pepper to taste
2 cups wild mushrooms, sliced
1 cup cream

Saute the onions in butter and oil until golden brown. remove from heat and set aside. In the same pan, brown the stakes on both sides for 2 minutes each. place on top of the onions in a warmed serving dish. Season with salt and pepper. Saute the mushrooms and cream in the same pan for about 3 minutes or until the cream starts to boil, seasoning with a bit of salt and pepper and any other herbs desired. scatter them over the steaks and serve. Goes great with a glass of Scotch whiskey
