Cheese Trios & Spinach Puffs - so Easy and Delicious
Prep Time: 10 mins Total Time: 35 mins Serves: 18, Yield: 18 puff pastries
250 g spinach, chopped 100 g ricotta cheese 1 cup blue cheese, crumbled 1/2 cup parmesan cheese, shredded 1 eggs 1/2 teaspoon garlic, minced 2 tablespoons parsley, finely chopped 6 phyllo pastry sheets cooking spray
Directions:
Lightly brown garlic in a pan with a little water and set aside to cool (this takes the smell away from the garlic when cooked). Mix together all the shredded cheeses, fresh or thawed chopped spinach, egg, parsley, and cooled garlic. Cut the filo sheets into 3 equal strips so that you have 18 strips all together. Place 1 heaped tablespoon of mixture at the end of a strip, and fold over diagonally, making a triangle, continuing to fold it to the end, and spray the end piece with cooking spray. Pinch pastry together to form the triangle puff and place on a greased oven tray. Cook in a hot oven (230 degrees celcius)for 25-30 minutes. Eat hot or it will go soggy! With any leftovers, best to freeze and then reheat in 180 degrees celcius oven for about 15 minutes. I wrap them in paper towel and pop them in the microwave for 1 minute to defrost first

"Nice quick appetizer. My original. Cooking time is chilling time."
Ingredients
13 ounces canned chicken, breasts, chunk, canned ( I use Members Mark )
mayonnaise, to taste 12 bagel chips, with sea salt ( I use New York Style bagel crisps ) 6 teaspoons hot wing dipping sauce ( I use BWW, Wild ) 6 teaspoons blue cheese dressing, your favorite kind
Directions Mix the canned chicken with just enough mayo to make just moist. Chill for 30 minutes. Lay out the bagel crisps on a plate. Place 1/2 tsp of hot sauce on each crisp and spread. Place tablespoon of chicken mixture on each crisp. Top with 1/2 tsp of blue cheese dressing. Serve.
Note: You will have lots of chicken mixture left over to make more.

Tapanade
2 cups kalamata Olives. 1 cup Green Olives. 1/2 c olive oil to Thin. 1/4 c roasted tomatoes. 1 T capers, juice of 1/2 lemon, 2 cloves of garlic, 3 stems of rosemary, leaves of 3 basil stalks. 1/4 c pistachios.
Food process everything and season with fresh salt and pepper. Refrigerate until ready to serve. Serve with assorted crackers or party rye.
