A very nice, short article in the Celtic Radio Announcement this morning to set the tone for the holiday...

This is another holiday with deep roots into the deep past. When a new religious order wishes to supplant ancient pagan rituals they first try to remove them. Then they try to change them or cast them in an unfavorable light. If that does not solve the issue they just incorporate them into their own rituals...We all need this time for reflection and contemplation. Have a great All Hallow's Eve...Drink up and be scary...Proust, ya'll...

Sunny and clear here in SW Florida, 68 now with 94% humidity. Temperature rising to about 84 by 3:00 while the humidity is dropping to about 35% around 5:00...Skol, ya'll

Grew up on Country music...50's 60's and 70's, that stuff they play today, well, it ain't country and it's barely music. Country music can trace it's roots back through Bluegrass all the way to the mountain music enjoyed by the Irish, Scots and English immigrants. Their folk and traditional music is with us still today and I love it...But suicide? Are you daft, come on now, with all the trash music out there that's so dark and violent? Bye the way, do you know what you get when you play a country song backwards? His girl comes back, he gets a new truck and his dog doesn't die...Amen

When I was a youngster many years ago my next door neighbor would "go back" every other year to Co. Cork where she was born and raised. One year she brought me back some stones and bits and pieces of mortar and such from a couple of castles. She also brought back a small piece of peat for to burn like incense she says. Well the stones and such are long gone but that smell of the smoldering peat still fogs my mind to this day. An aroma I have never forgotten, thanks Aunt Peggie...Cheers ya'll...

My lovely wife and I wanted to hit Downtown as usual but she will be working late on Friday so we will hit a couple of smaller celebratory places with some friends for drinks and...drinks...Then spend the rest of the weekend home eating and drinking to our hearts content while watching all the Irish movies we can pull up...Lots of clinking glasses and outlaw pipes for sure...Slainte

Thanks togo for the brief but succinct lesson on corned beef. I have not seen the Boston Irish version since I moved from South Jersey, not that it was prevalent but was available if one so desired. While I love corned beef and cabbage I much rather have a big, fat sandwich on Deli Rye with Lorraine Swiss and sauerkraut straight from the bag or can as it were. Add a big bowl of boiled and buttered Dutch potatoes and carrots all washed down with plenty of Guinness, Murphy's or O'Hara's. Last night I had corned beef and coleslaw on a roll with a couple of Shiner Black Beers as a primer to next week...Cheers

Pretty good so far...about 2 weeks ago we had a couple of mornings where we woke up to low 40's, had to pop the heater on just to take the chill off ( set the thermostat at 60 ) Around here a 20 to 30 degree swing in weather this time of year is du jour. Overcast and chance of thunder showers and low 80's most of the week but still around 80 late this afternoon so we will be watching the game outside...

Been busier than a one armed paper hanger since mid summer. Glad you posted, it makes me take the time to reply...Cheers.

It's 77* right now moving up to 89* but after Hurricane Matthew blew by, we will be getting some over night temps in the upper 60's...fall enough for me. Since I have some fresh ground venison, compliments of my neighbor, I decided to make one of my favorite Fall dishes of venison chili. There are numerous recipes for chili and I make several myself from Texas Red with shredded beef and "No Beans Please" to white chilies with pork or chicken and a few in between. Some like their chili thin and soupy while others prefer a thicker, chunkier style...me, I like them all. The method you use to thicken is entirely up to you...your chili, your preference. You can simmer and cool a couple of times to evaporate or use corn starch or arrowroot mixed with a little water, shredded cheese, tomato paste, instant potato flakes or a roux. I used to take my chili so hot that I would sweat just thinking about eating it but I know that's not for everyone and I have mellowed somewhat in the last few years, so, I will leave the amount of spices up to you...Here's my Fall Venison Chili:

1 pound fresh ground venison
4 oz. bacon fat
1 tbl. butter
1 15 oz. can of black beans
1 10oz can Ro-Tel chili fixin's with seasoned diced tomatoes and green chilis
cayenne pepper
chili powder
garlic powder
Cholula hot sauce
Frank's Red Hot original
Salt & Pepper

1 into a medium hot pot dice the bacon fat and then add the butter
2 turn up the heat and add the venison, brown and S&P to taste
3 add your spices, stir and simmer
4 add Ro-Tel, stir and bring up tp heat
5 add black beans, stir and bring up to heat
6 add Cholula and Frank's, stir and reduce to a simmer
7 after 15 min. turn off and let cool
8 reheat to serve, dish it out and add a handful of
shredded Colby-Jack or Cheddar cheese and a chunk
of a baguette...

While we remember that tragic day and those that lost their lives let us not forget the courage and fortitude of those that took a stand and willingly sacrificed their own lives to bring down Flight 93 over Shanksville, PA. They were bound by faith and patriotism to act unselfishly as we all should do now in honoring their memory. I salute all those that fell that day and also those that rose up to help those injured and in need. Faith in GOD gives us strength, faith in our fellow man gives us courage and faith in ourselves gives us the will...the will to carry on.

I trust you and have the utmost confidence in Celtic Radio. I would like to wish all here in the Celtic Radio community a solemn and reflective Easter season. With all the troubles going on in the world today, it's nice to have a strong foundation to lean on for solace and understanding.

When the boys were younger we took them to my Lutheran Church for the sun-rise service on Easter. This was at a time when my church was finishing up construction on their new place of worship and the service was conducted outside while the sun was just rising, casting a beautiful glow across the morning sky. While we were all standing in silent reflection you could faintly hear the neighboring Catholic Church's congregation singing a hymn, it was so beautiful and enchanting. Our boys thought that the singing came from the angels and of course, my lovely wife ( good Catholic that she is) said, "Yes, of course it was."

Ours will be quite busy this year. Our one son, who works in California, and his lovely lass will be married on the 4th of July in Oklahoma. Then we will all (or most) meet up in St. Augustine for a family vacation. After which, most of us will head back home to SW Fla. and have another party so our son can show his new Bride where he grew up and meet his friends. All in all, 5 of our 6 children (from 4 different states) and their families will meet for the vacation, 4 of our 6 will be home for the 2nd wedding reception in Florida. But what has us the most excited is that we will finally get our hands on that beautiful little angel born last year in OK. that we have not seen yet. And on top of all this I have started watching our 2 month old grand daughter now that momma is getting back to work...Wow, I'm tired just thinking about it all, but I could not be happier...Nostrovia...

Saw "Risen" a couple of weeks ago...Very good, though may not be for everyone. My lovely wife and I went with her cousin and his wife and the all of us thoroughly enjoyed it...Matthew 27:54...Mark 15:39 and Luke 24:47...The main character, Clavius, is inspired by the story of St. Longinus...

Also saw "Eddie the Eagle" T'was a very enjoyable movie. Remembering the Calgary Olympics and the press coverage of "Eddie" brought to life his story of struggle and perseverance...Cheers.
