I ate half-smoked salmon trout with smashed potatoes. And as a dessert i took a piece of chocolate cake. That was yummy!

I don't know if this would be the recipe for the Baileys Irish Cream brownies or not, but it is DELICIOUS and it does have a white icing on them!

3 oz. unsweetened baking chocolate
1/2 cup butter
1 cup granulated sugar
2 egg, beaten
3 Tablespoons Baileys Irish Cream
2/3 cup plain flour
Dash of salt
2/3 cup semisweet chocolate chips

Melt unsweetened chocolate with butter in microwave and mix well. Cool.

Beat sugar and eggs together in mixing bowl. Add Bailey's Irish Cream and cooled chocolate mixture. Mix well. Stir flour, salt and chocolate chips. Pour into greased and floured 8-inch square baking pan.
Bake at 325 degrees for 20 minutes (test with wooden pick until ALMOST clean)
Cool completely (about 1-1/2 hours)

Pierce tops of brownies with a wooden pick randomly. Drizzle 3 tablespoons Baileys Irish Cream over brownies, then frost.

Frosting:
3 tablespoons softened butter
4 tablespoons Baileys Irish Cream
3 cups confectioners sugar

In mixing bowl, combine Baileys and butter. Mix well. Gradually add confectioners sugar and beat until sperading consistency. Frost cooled brownies.


I started a forum on recipes using Guinness; I may start one with this using Baileys! What ya think?

That does sound good. I'll have to try it this weekend. Had pizza tonight. Not just any pizza but pizza form a local Italian resturant called the Bell Chalet. I've had many a pizza from Michigan to Florida and I've haven't found anything that comes close. 4th generation recipe thsat is still held secret even in this tiny town. Tomorrow we are thinking of having pasties.

My son just spent the whole morning making some Scottish meat pies to take to a potluck for his Metal Art class. He's constantly doing these off the wall things- seems he was recalling a food vendor at the Fresno Highland games last year. The vondor's last name was Henderson and he sold Henderson's Scottish Meat Pies. How could we resist? We bought a couple and they were just heavenly!
Well, my son's attempt didn't turn out quite as good, but- not bad either!
That's what I had for dinner tonight.
