Eyemouth Tart

(Eyemouth is a small fishing village on the east coast of Scotland, near the border with England).

Pastry
4 oz plain flour
2.5 oz butter
1 oz caster sugar - (this is finer than granulated, but not as fine as icing sugar)
1 egg yolk

Filling
2 oz chopped walnuts
2 oz raisins
2 oz coconut (dessicated)
2 oz glace cherries
3 oz caster sugar
2 oz melted butter
1 egg (large)

Icing
2 oz icing sugar
enough lemon juice to mix sugar to a smooth paste

Make the pastry. Chill and then rollout to fit an 8 inch flan or quiche tin.

Mix all the dry ingredients for the filling, add the egg and melted butter. Spread the filling on the pastry. Bake at gas mark 5 or 190 degrees C or 375 degrees F for approx 25-30 minutes or until the pastry is cooked.
Mix icing and then drizzle over the flan whilst it is still warm.

This should be served cold.

;) I don't have a flan pan.  (cry) I'll have to use a pie pan. I guess if the family likes the recipe, they might get me the right pan for Christmass. ::hehe I'll use the blender to make caster sugar.   ::confused   Now  glace cherries, are those colored red or green, in a juice, or like the ones put in a black bun? ;) I'm guessing marachino cherries. but they could be fresh soaked in rum, wine or something.  :rolleyes

glace cherries are dried and sugared red cherries.  Not the maraschino ones - they taste of almond oil.....   Any good grocery shop should have glace cherries with their cake ingredients.

Okay - cherries like one would put into a Christmas fruitcake perhaps? Candied cherries as they are called here. Caster sugar is also called "superfine sugar" and can be found in most grocery stores.

My teeth are begining to hurt just thinking about this recipe! Sounds delicious!!!!  ::icecream

Let's hope there arent any Scottish recipes that involve chocolate or I will be in major trouble by Christmas - I LUV to cook - but I also LUV to eat!  ::inlove

Yes, that would appear to be the American equivalent of the European glace (sorry, no French grammar accents on this programme to make it glass ay!;) cherries :)

Pumpkin cheesecake is delicious!  In my opinion any kind of cheesecake is good.  I've already made a pumpkin pie and we have scarved it down.  Yesterday (Tuesday) I made a carrot cake and a coconut creme pie.  Today I bake more and make my potato salad and cranberry salad for Thanksgiving dinner.  I luv Thanksgiving.  All those mouth watering smells and then the big Day arrives and you eat so much, it's sinful.

OK Mac, where is that DUH emoticon? I think that needs it.  You go to a topic recipes, and cann't take the mentions of food.  What were you expecting? Instructions on putting in a new fan that burned out, because the computer never got turned off? Recipies = Food  :#
Aw but we love you anyway, how about a nice low calorie cranberry jello salid you can eat anytime?
