The victorious general (computer decides who wins) is awarded bonus points. Whether offensive or defensive depends on which one was the victor. If you change a general's name, he loses all bonus points he may have accumulated.
Not necessarily correct, I've seen a few cases where both the attacking and defending generals gained bonuses. I think it's more of a case where they get better just by leading a battle.

Is it possible for a general to die? Like when a whole army get obliterated, or will the game not allow that?

No, your generals don't die even if your whole army gets obliterated. The only thing that one player can do is change the name of his generals but by doing so one loses his defense bonuses completely. So one must think twice before doing that especially for a lone player.
