This sauce is great with a plain chocolate sponge dessert - or even better with something like a 'real' cheesecake. The contrast between the cream cheese/soured cream cake - and choc/coffee is great. Or just serve with plain vanilla ice-cream.


Quarter pint (Imperial) espresso coffee - no other coffee is suitable, it needs to be quite 'bitter' and full of flavour
Quarter pint double cream
3 oz soft, light brown sugar
5 oz plain(dark) Belgian chocolate, broken into small pieces

Heat coffee, cream and sugar together in a heavy-based saucepan. Bring to the boil and reduce heat immediately and simmer gently until reduced by about a third, stirring occasionally.

Remove from the heat and stir in the chocolate. Stir until choc has melted and allow to cool slightly. Serve warm. This sauce will set if you allow it to go cold! cool.gif
