And now that we have all had the meal and been thankful for all that has been given us -- a recipe for some of the overabundance. Let's hear the turkey leftover recipes!
This is easy:
Chipotle Turkey Salad
1 cup chopped roasted turkey meat (dark and light) 1/4 cup chopped white or red onion 1/4 cup chopped celery 1/4 cup chopped sweet red pepper 1 Tbsp chopped jalapeño chili pepper 1 Tbsp chopped cilantro 1/4 cup mayo 1 teaspoon chipotle powder (more to taste) Salt and freshly ground black pepper
Mix chipotle powder into mayonnaise. Put turkey, onion, celery, sweet peppers, jalapeño, and cilantro into a medium sized bowl. Fold in the seasoned mayonnaise until well mixed. Add salt and freshly ground black pepper to taste.
Serve with avocados, sliced tomatoes, and thick blue corn chips as a salad; or serve in a sandwich. Serves 2, unless you've been out in the cold. Then you'd better make more for the other guy.
You can vary this into a mole-flavored salad with the addition of a little cocoa powder (unsweetened!) in the chipotle-and-mayo dressing. Make up a tiny bit of dressing first to see if you like it.
