I generally would bring a bottle of wine, cheese of some sort, a summer sausage or roasted cornish hens and of course some good company.

I found this on the web, it is a great picnic sandwich!!

Muffuletta Sandwich

Linda Larsen, About.com Guide

You can make the olive mixture ahead of time and keep it in the fridge for use as a sandwich spread with any cold sandwich recipe.

Prep Time: 25 minutes
Total Time: 25 minutes

Ingredients:

•1/2 cup chopped green olives
•1/2 cup chopped black olives
•1/3 cup chopped kalamata olives
•1/3 cup chopped fresh parsley
•2 Tbsp. chopped fresh cilantro
•1/3 cup extra virgin olive oil
•1 Tbsp. minced garlic
•1/4 tsp. pepper
•6 hoagie buns, split
•1 lb. thinly sliced cooked ham
•1/2 lb. sliced Swiss cheese
•1/2 lb. sliced Provolone cheese
•3 tomatoes, sliced

Preparation:

Combine olives, parsley, cilantro, red bell pepper, olive oil, garlic and pepper in a small bowl and mix well; set aside. Make sandwiches by stacking olive mixture, ham, cheeses, tomatoes, and some more olive mixture on split hoagie buns. Press together gently and serve immediately.

Makes 6 sandwiches

This makes a great tasting sandwich spread!

Tapanade


2 cups kalamata Olives.
1 cup Green Olives.
1/2 c olive oil to Thin.
1/4 c roasted tomatoes.
1 T capers,
juice of 1/2 lemon,
2 cloves of garlic,
3 stems of rosemary,
leaves of 3 basil stalks.
1/4 c pistachios.

Food process everything and season with fresh salt and pepper.
Refrigerate until ready to serve.
Serve with assorted crackers or party rye.

Little off topic, but if you have a grill.....

Slice jalapeno in half longways,
Fill with cream cheese and olives,
Wrap in bacon and hold in place with a water soaked toothpick,
Grill until bacon is done......

They're easy to make on a picnic or camping out with just a bit of prep time.

Here is another make ahead food good for a picnic:

Recipe Name: CHERYL'S CHEESE BALL
Category: APPETIZER
Serves: 12

SOURCE Shadow's Wife

16 Ounce Cream cheese
15 Each Olives , Chopped fine
3 Large Garlic clove, minced
1 Cup Walnuts, chopped

In a mixing bowl place all the ingredients except the walnuts. Mix well and shape into a ball. If mixture is to stiff add some of the juice from the jar of olives. Roll shaped ball around in different bowl of chopped walnuts to cover. Chill and serve with favorite crackers.

Recipe Name: HAM AND CHICKEN CLUB
Category: SANDWICH
Serves: 1

3 Slice Bread of choice
Blue Cheese Dressing, to taste **
2 Ounce Ham, thinly sliced
2 Ounce Provolone Cheese
2 Ounce Chicken Breast,thinly sliced
3 Slice Tomato
Lettuce (for cold sandwich only )

As a hot sandwich : Preheat broiler to 425f. On a cookie sheet, lay out three slices of bread. Spread all with Blue Cheese dressing. On first slice, place the ham and half the provolone. On second slice, place the chicken and tomato. On the third slice, place half the provolone. Broil until cheese bubbles and tomatoes soften. Remove from oven with spatula. Assemble, secure with toothpicks, slice and serve.

As a cold sandwich : Spread three slices of bread with Blue Cheese dressing. On first slice layer ham, chicken and lettuce. Cover with second slice of bread. Add provolone cheese, tomato and lettuce. Top with third slice of bread. Cut and serve.

Recipe Name: PECAN PIES
Category: DESSERTS
Serves: 24

SOURCE ESTER AKERS

3 Ounce Package Cream cheese
1/2 Cup Margarine
1 Cup Sifted flour
1 Cup Salt

FILLING:

1 Cup Pecans, finely ground
1 Egg
1 Tsp. Margarine
3/4 Cup Brown sugar
1 Tsp. Vanilla

Cream together the first 4 ingredients to make dough. Shape in 24 balls and press into small (mini) muffin pans to make the small pie shells.

FILLING:
Mix all the filling ingredients together. Put 1 teaspoon of filling in each shell.

Bake in 350 degree oven for 18 minutes.

Potato salad is a picnic classic over here. This is a recipe for a bit different one, yet very tasty.

HORSERADISH POTATO SALAD

(source : Tennessee Home and Farm)

Ingredients

8 medium red potatoes
1 ½ cups mayonnaise
1 cup sour cream
1 ½ teaspoons horseradish
1 teaspoon celery seed
½ teaspoon salt
1 cup fresh parsley, chopped
1 medium onion, minced
Instructions

Boil potatoes in jackets. Peel and slice 1/8 inch thick.
Combine remaining ingredients except the onions and parsley.
Mix onion and parsley separately.
Place a layer of potatoes in serving dish; salt lightly. Cover with layer of sauce.
Sprinkle with parsley and onion.
Continue layering until done, ending with parsley and onion. Do not stir.
Chill 8 hours or overnight.

My family loved it, we often had it with chicken drum sticks I prepared at home to eat them cold later. The horseradish makes the difference, very tasty.
