This is a very old-fashioned, but good, apple pudding!

6 apples, peeled and then thinly sliced
1 tsp cinnamon
sugar to taste (depending on the 'sourness' of the apples you use)
4 fl oz double cream
3 egg whites

Place the apples, cinnamon and a pinch of sugar into a pan and cook until the apples soften, then pass through a sieve and allow to cool.

Whip the cream into soft peaks. Separately, whisk the egg whites with a little sugar until it forms stiff peaks. Fold in the cream and egg whites to the apple mixture and serve either in individual glasses or one large bowl.

I serve this with thin ginger biscuits or langue du chat style biscuits.

That sounds very tasty! I love old recipe's. Sometime the simplest ingredients make the most wonderful treats....

O'siyo Catriona,
I am definitely going to make Apple Snow for my Tuesday 'O'ginalli (friend) night'..I have friends come over for some stimulating conversation and I always serve 'something sweet' and this sounds perfect! Ni Ya We for sharing ~smile~ Is only Saturday and really don't know if I can wait until Tuesday ~grin~

O'siyo Catriona,
The Apple Snow was a huge hit! ~smile~ I served it with crisp, molasses cookies and garnished the chilled bowls with strawberry & kiwi..YUMMY!..I even printed the recipe out for a couple friends so they could make it! Ni Ya We for adding to my 'O'ginalli Night' a wonderful experience! Now I need to pick out another one of your splendid recipes for next Tuesday biggrin.gif

P.S. The recipie was awesome. I cooked it, and started to eat it with my mom. YUUUUUUUUUUUUUUMMMMM.
