This is a very old-fashioned, but good, apple pudding! 6 apples, peeled and then thinly sliced 1 tsp cinnamon sugar to taste (depending on the 'sourness' of the apples you use) 4 fl oz double cream 3 egg whites Place the apples, cinnamon and a pinch of sugar into a pan and cook until the apples soften, then pass through a sieve and allow to cool. Whip the cream into soft peaks. Separately, whisk the egg whites with a little sugar until it forms stiff peaks. Fold in the cream and egg whites to the apple mixture and serve either in individual glasses or one large bowl. I serve this with thin ginger biscuits or langue du chat style biscuits. |
