Here's my granny's recipe for what she called Cheese Pudding, and what my mum called a cheese souffle! Don't know if this is the recipe as you remember it!
4oz mature Cheddar cheese (the 'tangy-er' the better) 2 large eggs separated, and yolks beaten lightly. 10 fl oz milk 2 thick slices of white bread (from an uncut loaf is best - and should be a day old) which you should then grate into fresh breadcrumbs 2 tsp English mustard Freshly ground salt and pepper, to taste Little chopped parsley or chopped chives (optional)
Coarsely grate the cheese and mix with the bread. Put the separated and lightly beaten egg yolks into the milk with the mustard and salt and pepper - add to the bread and cheese mixture. Whip the whites until they are really stiff(add a small pinch of salt before starting, seems to help add air to the mix). Fold the whites into the cheesy mix and, if you want to add the optional ingredients, fold in the chopped chives or parsley.
Put into a well-buttered souffle dish and place in a pre-heated oven (Gas mark 5, 375F, 190C) for about 45 minutes until well risen and golden on the top. Serve quickly as it will collapse very quickly.
Hi Catriona Yes that was the recipe, have tried it and turned out yummy, just as I remember it
I sent it to my sister in Ottawa too and she was thrilled with it so a big thank you from her as well
I was so sure it was cooked on the top of the stove, but am told from my `big` sister`, that once I had grated the cheese and bread, they used to give me a pot to `play with` so guess that`s where the pot came into it LOL
