Homemade corned beef and cabbage. My wife makes it with Quinness. (that is there's Quinness in the recipe- hmmm could be there's a little in the cook as well!)

New York Vanilla Ice Cream. If you are brave enough throw some into a pint o' Guinness with a touch of wipped cream and a cherry (similar to a root beer float)and you have my recipe for what I call a New York Irish.

Ahhh- you said the magic words- "if your brave enough!"- I just happen to have some bottles of Quinness in the fridge- no New York Vanilla ice cream, though. I imagine Breyers or something similar would work?

Breyer's should work. I use Kemp's New York Vanilla which, I think, might be a local company.

Thanks Robert Phoenix above for the idea for recipes made with Guinness. I started a new topic under recipes about recipes using Guinness. I find/collect them, try them, eat them and keep those that are owrth keeping. Right now I am looking for a complete meal from "soup to nuts" sort of things using Guinness in EVERYTHING. I am going to try the Guinness float this week during our time away in a cabin.

The last thing I ate was last night - baked sweet potato, black-eyed peas with Vidalia onions, turnip greens and fried green tomatoes - with SWEET iced tea. biggrin.gif

Veal Parmagiana tonight with some Bailey chocolates for a small desert. I'm still trying to find out a recipe for a chocolate brownie that had a white frosting and mini chocolate chips that used Bailey's as part of the recipe. Had it during the play Flannigan's Wake in St. Paul but was unable to get the recipe.

I don't know if this would be the recipe for the Baileys Irish Cream brownies or not, but it is DELICIOUS and it does have a white icing on them!

3 oz. unsweetened baking chocolate
1/2 cup butter
1 cup granulated sugar
2 egg, beaten
3 Tablespoons Baileys Irish Cream
2/3 cup plain flour
Dash of salt
2/3 cup semisweet chocolate chips

Melt unsweetened chocolate with butter in microwave and mix well. Cool.

Beat sugar and eggs together in mixing bowl. Add Bailey's Irish Cream and cooled chocolate mixture. Mix well. Stir flour, salt and chocolate chips. Pour into greased and floured 8-inch square baking pan.
Bake at 325 degrees for 20 minutes (test with wooden pick until ALMOST clean)
Cool completely (about 1-1/2 hours)

Pierce tops of brownies with a wooden pick randomly. Drizzle 3 tablespoons Baileys Irish Cream over brownies, then frost.

Frosting:
3 tablespoons softened butter
4 tablespoons Baileys Irish Cream
3 cups confectioners sugar

In mixing bowl, combine Baileys and butter. Mix well. Gradually add confectioners sugar and beat until sperading consistency. Frost cooled brownies.


I started a forum on recipes using Guinness; I may start one with this using Baileys! What ya think?
I hope this is what you're looking for - like I said, they are sinfully DELICIOUS!!!

That does sound good. I'll have to try it this weekend. Had pizza tonight. Not just any pizza but pizza form a local Italian resturant called the Bell Chalet. I've had many a pizza from Michigan to Florida and I've haven't found anything that comes close. 4th generation recipe thsat is still held secret even in this tiny town. Tomorrow we are thinking of having pasties.

My son just spent the whole morning making some Scottish meat pies to take to a potluck for his Metal Art class. He's constantly doing these off the wall things- seems he was recalling a food vendor at the Fresno Highland games last year. The vondor's last name was Henderson and he sold Henderson's Scottish Meat Pies. How could we resist? We bought a couple and they were just heavenly!
Well, my son's attempt didn't turn out quite as good, but- not bad either!
That's what I had for dinner tonight.

Weird stuff. lLast night when I was typng out my answer to this post I thought, (and typed) that tomorrow we may have pasties. When I posted my wife had already gone to work and we hadn't even discussed supper ideas for today at all. When I got off work and after not talking to her all day I asked her what she would like for supper. She suggested pasties.

A snack of vanilla yogurt with fresh strawberries and banana. Y'all have made me very hungry. One hour til quittin time and now the bean soup I planned for dinner seems a little inadequate.

My daughter tells me Ben & Jerry's makes an ice cream with Guiness. Anyone heard of it or tried it?

My wife and kids are vegetarians so when we barbeque it's a challenge to make thos veggie burger patties work on the grill. Anyway, I came up with a concoction that tastes better than BBQ sauce and helps the veggie burgers to stay together-
1/2 cup olive oil
teaspoon of minced garlic
1/2 oz. tammarii
a couple of dashes of tobascoe
whip with a beater and baste with a brush.

Anyway, this is what we just had- I had a couple of Polish Sausages BBQ'd and basted with this stuff as well-

Salad with Tomatos, Italian Blend Cheese, Parmessian and Ranch Dressing with Bacon, Mac and Cheese (Made in the over with Monterey Jack, Cheddar, Queso Quesadilla and Asadero Cheeses) and Grapes all with a Tall glass of Ice Tea.

Followed by a delightful blend of mixed Pills.

Oh, now don't laugh -- this was heavenly! I've just had a piece of sheep cheese with a tangy edge to the flavor similar to cheddar, and the cheese is all studded with red hot pepper seeds (the cheese is called Brigante peperoncini), together with a big fresh-off-the-tree Granny Smith apple and some multigrain bakery bread and butter and sparkling cider. If you fancy the hot and sour combination, you'll know why I'm saying the apple and cheese was so good I can hardly stand it. notworthy.gif

Oh, I spoiled myself this morning -- Went out to a cute little Italian place for brunch, and had salmon fettuccini (rich and delicious). I asked for Campari, which I love, straight up. People usually mix it with sparkling water or strain it through crushed ice, but I said no, just the way it is. The girl conferred with the barkeep, and they both looked worried, then she came back with a big old-fashioned glass half full of the stuff. Must have been at least four ounces! Very happy camper today, I am.

What I ate last was a plain old bologna sandwich toasted with mustard.

Bologna sandwiches are alright - once in a while I get a real hankerin' to eat something like that - the weird thing is that I never feel very guilty about it.

The last thing I ate (as I type this) a hunk of St. Andre Triple Cream cheese, Ritz Crackers, and a glass of Vampire Chardonnay - YUM!!!

Dear Gwyn,I'm glad you understood my french word for bologna I don't know what came over me again I do it all the time switching from french to english and vice versa. I know that the meaning of the word is something quite different in english, but I actually wrote it in "french slang". I corrected my word. tongue.gif

I have to agree with you there! Bologna always puts a weird texture / flavour on the roof of my mouth and after being forced to eat them for years - I am happy to say that I now am Bologna free!

I'll take PB&J or peanut butter and banana or tuna fish or egg or beef or ham or cheese or turkey or corned beef or....

Tonights dinner featured an outstanding slab of ribs and mixed veggies. Right now I've got a nice big mug of Royal Majesty Orange Pekoe tea on the go!

This does not however, mean that I am in any way ungrateful for the meal. Hamburgers and corn are two of my favourites. It just seems kind of same old, same old.

Just got back from Chili's where I usually get the Cajun Chicken Salad but tody I splurged and got a burger and fries. On Sundays, we usually eat around 3 or 4pm and that's enough for me for the day so I figure I can go ahead and have a few fries once in a while if it's going to be my only meal that day. Interestingly, I live with a man who can't understand how I can possibly survive on less than 3 meals a day but normally 2 meals does me just fine.

Just finished a 100-calorie pack of Sunchips and am working on my second cup of coffee for the day. We are having a "Lunch and Learn" session today at work and they are getting pizza but I'm opting out of the food. I don't eat pizza very often anymore and, strangely enough, a friend ordered it Saturday night while my girls and I were visiting. Twice in a matter of days would be just too much for me. I'm trying to be good about fast food so I'll just have my chicken noodle soup.

I had some chicken club tacos at Chili's today and some hot tea. Of course, now I'm dealing with a weird pain in my chest that my sweetie says is heartburn (me, with the cast iron stomach) and I did take some Tums to humour him.

pretentiouswombat thats kind of what happened to me. It hurt..I had a endoscopy done and found out I have a hiatel hernia I also had really bad stomach acid. But I thought I was having a heart attack or something. If it continues I would see a doctor mainly if you have the stomach acid coming up at all....hope it gets better for you.

I'll keep an eye on things, rindy. Thanks for the info. Today it seems to be better but it was odd that it lasted for two days. And don't mention endoscopy to me! Run away! Run away! I had one done when I ended up getting a tummy tube - couldn't swallow for 2-1/2 months and the nasogastric tube was giving me problems. All I can say is, thank goodness for Verced! The wonder drug. wink.gif

I just had some chicken and wild rice soup and finished my cup of tea. Druid, maybe you can progress to soup next. Chicken noodle is the universal "comfort" food.

went to my favorite Greek restaurant after church today and had a Greek salad, gyro, greek potatoes and a greek dessert that I couldn't spell, even if I had to - it was delicious though. biggrin.gif

(I am cutting back to just one cup of coffe or tea in the morning and switching to water after that. If the weather stays warm enough in the office, that should work as I usually just drink the hot stuff to keep from freezing)

But, last night I did eat catfish and green beans with a wheat ale.

Well as long as the catfish wasn't deep fried!!!

I'm going on my 3rd fast in 3 month for triglcerides and cholesterol testing. He, the doc, keeps saying eat fish and beans.

This Saturday food shopping there was a big sign above the bananas that severe weather has affected the banana crop and the availability and prices of bananas will be effected.
