Now for our veggie friends (I love veggie food, there's this really good (& cheap) restaurant in Ratingen (walking distance from where I lived) and they make gorgeous food...)

Grünkern Frikadelle (Grünkern= unripe spelt grain, very healthy and it has a great taste. It might be a bit hard to get though. Frikadelle = Burger type thing)

(4 Persons)

250 g Grünkern (unripe dried spelt grain)
˝ Liter Water
1 Tbs stock (of the stuff that comes in jars, else a stockcube)
1 Tsp Salt
1 Tsp Mustard
1 Tsp Paprika
1 Tsp ground pepper
1 Tsp mixed herbs
1 Tbs Soysauce
1 Onion
1 Egg

Coarsely grind the Grünkern and give into a pan together with water, spices and the finely chopped onion. Let it boil and then turn off the cooker and let it soak for 15 minutes.
Let the mixture cool down.
Mix in the egg (and if you want some grated cheese) and form burgers with wet hands.
Fry in a little oil until gold-brown
(very tasty cold as well)

Clean Champignons and cut into fine slices
Make a dough of the wheat, milk, egg, salt and parsley and add the mushrooms.
