Edinburgh used to have notorious fogs - much better since the Clean Air Act - but we still get what are called 'sea haars'.... a haar is a sea mist. Very spooky if you happen to be standing on one of the topmost ramparts of Edinburgh Castle and look towards the Firth of Forth - the whole town is hidden under a blanket of mist , the castle seems to be floating on clouds....

This pudding is similar to cranachan, but without fruit - I made it for lunch last Sunday - as we are enjoying an unbelievable heatwave... thank goodness it seems to be breaking now!

EDINBURGH FOG

1 pt double cream (Imperial pint)
2 tablespoons of caster sugar
Few drops of vanilla essence (to taste)
6 tablespoons whisky
4 oz blanched almonds (cut into small pieces)
20 small Ratafias


Whip the cream until it is thick and into peaks (don't overbeat or it will be inedible!) and stir in the sugar, vanilla essence and whisky.


Mix in the almonds and ratafias. Chill well before serving.
